Patty Mitchell is Director of Research and Development at Solana Baking Co. in Carlsbad, Calif. She spent 5 years teaching pastry students at the Culinary Institute of America in Hyde Park, N.Y., worked at Four Seasons resorts in Hawaii and California, taught at the University of Hawaii, and worked at other resorts in Colorado, Cape Cod, Virgin Islands, and California.
